PRESENTATION AND TERROIR
6 hectares of old Cinsault vines on our beautiful sandstone sites. The vines come from field selections conducted in the Châteauneuf-du-Pape region at the start of the 1960s.
70% Cinsault, 20% Grenache, 10% Syrah
WINEMAKING AND AGEING
For the Rosé Fruit Défendu, the Cinsault grapes are destemmed and transferred to tanks for short soaking on the skins. We only use the free-run juices – no press juices – which are settled and fermented in stainless steel tanks. Temperature control is not too strict because an old varietal like this one would not appreciate high-tech winemaking! All the grapes are picked by hand.
Shows equally well as an aperitif or with Mediterranean vegetables grilled over a wood fire
