PRESENTATION AND TERROIR
Ponant is quintessentially Mediterranean but has influences from the West, or ‘ponant’ in French. Our Syrah vines are deeply rooted in the South, exhibiting aromas of fruit and spice along with abundant richness. The Cabernet-Sauvignon and Merlot grown on our marly and Villafranchian soils epitomise our spirit of openness to the West. The Merlot adds roundness and generosity whilst the Cabernet brings rigour, structure and good balance.

Cabernet 25% , Merlot 35%, Syrah 15%, Grenache 25%
WINEMAKING AND AGEING
All our vines are harvested by hand and the fruit is sorted in the vineyard. The grapes are destemmed and transferred to the vats using a conveyor belt. Vatting lasts between 18 and 21 days. Some of the wines are blended early then matured in Burgundy casks previously used for 2 or 3 wines so as to extend the maturation phase slightly.
